This coffee comes from Yacuanquer municipality in Nariño, southern Colombia, grown at approximately 1900 meters altitude. The coffee is composed of Caturra and Castillo varieties, cultivated on mineral-rich volcanic soil. Beans are hand-sorted and mechanically depulped, then fermented dry for 18-30 hours, followed by 18 days of drying on raised beds. The coffee is round and sweet with a flavor profile suitable for both espresso and filter preparation, offering delicate espresso notes or complex filter characteristics.
What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
