About This Coffee

This microlot from Finca El Paraiso in the Cauca region of Colombia is produced by Diego Samuel Bermudez. The Castillo variety coffee undergoes a complex process: 48 hours of anaerobic fermentation, followed by a second fermentation with a culture medium of coffee cherry skins and mucilage. It is then washed using a thermal shock technique and dried in a custom dehumidifier. This coffee offers a fruity profile with notes of plum, guava, papaya, panela, candied pineapple, and tart raspberry, complemented by a strawberries-and-cream mouthfeel.
