About This Coffee

This Colombia coffee is sourced from a Huila/Tolima macrolot at 1500-1600 meters altitude. It features mixed local varietals and is washed processed. The coffee is part of a collaboration with Equation Coffee, whose initiative supports smallholder farmers through the Soil Revolution Fund by adding a $0.05/lb premium to help farmers diversify crops, improve soil health, and reduce dependence on chemical fertilizers. The flavor profile includes chocolate and caramel notes with a rounded, balanced, classic Latin American character.

Penstock Coffee Roasters

Penstock Coffee Roasters was originally founded in 2009 as OQ Coffee by Ben and Jessica Schellack before rebranding to Penstock in December 2018. Based in Highland Park, New Jersey, the roastery holds CCOF certified organic status and sources 85% of its coffee directly from farms in Central and South America, building relationships rooted in transparency and shared values. The remaining 15% comes from coffees bearing certified organic, Fair Trade, Bird Friendly, or Rainforest Alliance designations, ensuring all selections meet rigorous standards. Two time Good Food Awards finalist status in 2017 and 2018, alongside a Community Dividends Grants program supporting social justice projects, reflects commitment extending beyond coffee into systemic change.
