It features local heirloom cultivar 74158 and is full natural processed, dried on raised beds over 3 weeks. The coffee is Organic certified and sourced through Royal Coffee, Inc. USA. Harvest occurred from October 2024 to January 2025. The roast is light with flavor notes of raspberry, black tea, and cocoa.
Hedge Coffee was founded in 2015 in San Francisco by Olga and Alex Sobal, starting as a mobile specialty coffee catering company before establishing a permanent location in the Mission District. The couple brought roasting in house in 2020, sourcing green coffees through importers while building direct relationships with producers where possible. Hedge emphasizes environmental stewardship and transparency in its sourcing, treating sustainability as an operational priority rather than a marketing angle. The roastery's roots in catering gave it an unusual perspective on service and portability that still shapes how it approaches coffee.
