This coffee is produced by Habtamu Fekadu Aga at his washing station in Ethiopia. Since taking ownership of the mill in 2020, significant investments have been made in improving processes and equipment for increased consistency. The coffee undergoes a unique washed process where 10% of the mucilage is left intact before fermentation for 24 hours. The beans are then handwashed and dried in indirect sunlight with regular turning and inspections over 9-12 days. The mill treats its washing water to protect the surrounding environment and provides agronomy education to local farmers, emphasizing organic methods and regenerative agriculture.
Cerberus Coffee Co. was founded in 2019 by Cody and Tina in Jacksonville, Oregon, operating a 600 square foot café and micro bakery alongside a roastery in the Applegate Valley. The queer and BIPOC owned company sources Fair Trade coffee, consistently paying above minimums with transparent farmgate pricing, and established Southern Oregon's first co roasting programme allowing others to rent facility space. Their signature Wizard Cat espresso blend directs a portion of proceeds to trans and LGBTQI+ resources including Trans Lifeline. The micro bakery runs a stone deck oven producing vegan donuts, overnight focaccia, and seasonal quiches alongside the coffee programme.
