This coffee comes from the Hambella washing station in the Guji region of Ethiopia, at approximately 2,200 meters altitude. It is produced by Israel Degfa, one of Ethiopia's largest coffee producers and exporters operating processing stations across Guji, Yirgacheffe, and Sidamo regions. The coffee features heirloom varieties and undergoes classic washed processing. Cherries are hand-picked in multiple passes for optimal ripeness, depulped on the same day, and fermented in water tanks for 24-72 hours. After fermentation, beans are washed, sorted by density, and dried slowly on African beds for up to three weeks. The cup profile offers floral elderflower notes, caramel sweetness, apricot fruit tones, and milk chocolate with bright, integrated acidity.
