About This Coffee

This Ethiopian coffee is from the Yirgacheffe region, specifically from Gedeb village at the Jabo Neniko washing station. Grown at 2000-2100 meters altitude, it is cultivated in Semi Forest and Garden settings, with some coffee growing in gardens surrounding producers' homes. The coffee is processed using the washed method, where cherries are depulped, fermented, and sun-dried in parchment. The variety is local heirloom (autóctono local). Produced by small local farmers and harvested in 2020. The coffee features marked acidity with delicate notes of wildflowers and cacao nibs, described as very clean and sweet when prepared with milk. MOPLACO, Ethiopia's largest and oldest coffee importer led by Heleanna Georgalis, monitors and controls the quality of each lot in Addis Ababa.

Pablo Caballero and Nolo Botana had already built a track record in coffee when they launched Hola in 2016. The pair poured their accumulated experience into an operation built around quality, accessibility, and inclusivity. Coffee is roasted daily in small batches at the Sepulveda roastery in Madrid, ensuring beans are never more than a few days old at the point of sale. Their Lagasca location earned the number 12 spot on The World's 100 Best Coffee Shops 2025. Hola also runs an academy offering both its own certification and internationally recognized SCA credentials, alongside a podcast that has become a key part of the project. Seasonal coffees rotate through washed, natural, and experimental processes, producing a range from chocolatey depth to floral brightness.
