This is a single origin, single producer coffee from Mate Matiwos in Keramo, Sidama, Ethiopia. Mate Matiwos is the 2nd place winner of the Cup of Excellence in 2024 and operates a washing station in Keramo. The coffee is processed using the Red Honey method, where mucilage is partially retained during processing. The cherries are hand-sorted, pulped using a manually calibrated disc pulper to preserve mucilage, given a short fermentation, and dried on shaded beds with strong airflow. The varietal is 74158, grown at 2100 meters elevation. The coffee presents bright florals and red fruit with hibiscus and watermelon notes, complemented by a hint of pink peppercorn spice.
