This single origin coffee comes from the Merdiya washing station in the Nensebo district of West Arsi, Ethiopia. Operated by Testi Specialty Coffee, the station serves approximately 750 smallholder farmers in the Refisa area. The coffee is a landrace Typica variety grown above 2000 meters altitude. It undergoes a washed process with slow 100-hour fermentation, with fresh water cycled every 24 hours and tank temperatures maintained between 18.5 and 20.5 degrees centigrade. After washing, the parchment is dried on raised beds under parabolic shade for 15 days.
Flag & Wire Coffee was established in the summer of 2015 in McMinnville, Oregon, following a rebrand of Chrysalis Coffeehouse and Mud River Coffee Roasting. The roastery employs air roasting technology for small batch production, a method that differs from conventional drum roasters and is calibrated to produce lightly roasted beans that accentuate the full character of each coffee. The cafe at 755 NE Alpine Avenue serves as both a retail space and the hub of a wholesale program that supplies partners across Oregon.
