This decaffeinated coffee from Colombia's Tolima region is produced by Marta Bayter and family at El Vergel Estates at 1500 meters altitude. The coffee features Red and Yellow Caturra varieties and undergoes washed processing followed by EA (ethyl acetate) sugarcane decaffeination. This process uses naturally occurring ethyl acetate from fermented sugars to remove caffeine while maintaining flavor and sweetness. The coffee is medium roasted with flavor notes of dark chocolate, hazelnut, shortbread, and vanilla bean.

Sightseer sources 100 percent of its coffee from women farmers and producers, paying prices significantly above fair trade rates. The sourcing goes beyond checking a box: Zash and Gibson look for producers investing in quality and sustainability, supporting projects like the Forest Academy in Colombia for regenerative farming.
