This coffee comes from producer Fabian Acevedo in Huila Department, Colombia. The coffee is 100% Papayo variety, named for its papaya-like appearance. The processing involves fermentation in sealed bags for 24 hours, depulping, a second fermentation in tanks for 48 hours, washing, and drying. This modified fermentation process increases fruit aromatics while maintaining cleanliness and sweetness. Acevedo began working with coffee in 2006 under the guidance of his father Álvaro, developing expertise in modifying fermentation parameters to enhance specific aromatic characteristics. The result is a clean, sweet coffee with pronounced fruity notes including pink lemonade, apricot, and pink peppercorn.
Blind Tiger Coffee was founded in 2013 by Charles Biando and is now based in Bethlehem, Pennsylvania after relocating in 2025.
