This coffee is from Fazenda Um in the Minas Gerais region of Brazil, produced by the Um family (Stephano Um) at altitudes between 1100-1300 meters. The coffee is Catuai variety processed using the natural method. Fazenda Um, established in 2009, is a 300-hectare farm that balances traditional Brazilian coffee profiles with experimental processing methods. The coffee offers flavor notes of dried fruit, milk chocolate, and nuts, with a clean, sweet, and comforting profile characteristic of natural process Brazilian coffees.
Harmony Roasters began in 2021 when Dani sold his motorbike to buy a one kilogram capacity roaster. Together with his partner Agatha, who handles photography, social media, and the web presence, Dani built a micro roastery in Montcada i Reixac on the outskirts of Barcelona. His approach favours minimal intervention, letting the coffee's natural character come through rather than imposing a heavy roast signature. It paid off quickly: Dani won both the Catalan Coffee Roasting Championship and the Spain Roasters Championship in 2021, then took the Catalan title again in 2022. The roastery uses fully compostable packaging and supplies several businesses around Barcelona.
