About This Coffee

This is a washed coffee from Oaxaca, Mexico, specifically from the San Agustin Loxicha region. It is a blend of three coffee farmers: Fidel Antonio Santiago, Felimon Perez Almoraz, and Minerva Ambrosia Luna. The coffee is made from the Pluma variety, a typica type cultivar that descended from the first typica trees planted in the 17th century and evolved due to the unique micro climate and rich volcanic soil. The Pluma de Hidalgo variety has an official designation of origin in Mexico. This medium roast coffee features flavor notes of toffee, figs, almonds, and blueberry.

Rabbit Hole Roasters

Founded in 2019 by David Lalonde and Sophie Moreau, two Montreal natives who met at the Montreal Coffee Academy, Rabbit Hole Roasters emerged with a vision to create a radically different type of coffee company. The company earned Roast Magazine's prestigious "Micro Roaster of the Year 2023" award for their commitment to truth before hype and people before profit. Their approach challenges industry norms by focusing on emerging origins, publishing transparency reports, and addressing uncomfortable truths about inequality in the coffee trade, all while maintaining that they "know very little about coffee" and are okay with that.
