A coffee from Finca Bet-el, produced by Cesar Ledesma in San Bernardo del Viento, Colombia, grown at 1,600 meters altitude on plot "Gyrola". The Sudan Rume variety was established between March 2021 and September 2022 with seeds gifted from producer Diego Samuel Bermúdez of Finca Paraíso, originating from Finca Pirineos in El Salvador. Cherries are selectively harvested every 7–15 days, sorted by hand and processed anaerobically in tanks with air valves for 60 hours, then dried in convection ovens at no more than 39°C. The cup is aromatic and complex with a deep, rich sweetness, a soft body, floral qualities, and notes of mandarin and strawberry.
