This coffee is from Finca Campos Hermoso in Circasia, Quindio, Colombia at 1550-1600 meters altitude, grown by Edwin Noreña. The variety is Sidra, processed using the Black Honey method. Cherries were manually selected and fermented in a low oxygen environment for 56 hours, then dry-pulped and fermented again for 48 hours before drying on raised beds for 15 days. The flavor profile features spiced florals and black tea notes.
