This coffee is produced by the Portillo family at Finca Corintio in Honduras. It is a washed Icatu variety, handpicked at peak harvest with a sugar content between 20-25° Brix. The processing involves dry fermentation in open-air pools for 24 hours, followed by depulping and an additional 28 hours of fermentation. The beans are then washed and dried on unshaded patios for 12 days. This coffee offers a clean, fruity, and refreshing profile with tasting notes of currants, cranberry, lemon tea, and candied nuts.
