This is a Geisha coffee from Finca Deborah in Panama. The cherries are hand-picked and de-pulped before undergoing carbonic maceration in CO2-flushed steel tanks for approximately 50 hours. A unique aspect of this processing method is the 'Echo' process, where a portion of the removed cascara is reintroduced to the fermentation tank, adding flavor complexity. After fermentation, the coffee is gently rinsed and dried slowly on shaded raised beds to around 11% moisture content. This coffee was used by Assembly's Head of Quality to win the UK Barista Championship in 2022.
