This coffee is from Finca El Vergel in Colombia's Tolima region, produced by second-generation farmers Shady and Elias Bayter. It is processed using the innovative Koji Natural method, where Koji spores are spread over coffee cherries and carefully controlled at 20-32°C for 36-48 hours. This experimental processing creates an extraordinary flavor profile with notes of blueberry, blood orange, whiskey, pineapple, maple syrup, and liquorice. The coffee is roasted to a Medium level and is recommended for Filter, Cold Brew, and AeroPress brewing methods.
