This Gesha variety coffee is from Finca Ethiopia, a 34.5 hectare farm in El Salvador's Apaneca region, part of the Los Naranjos Coffee group. Located behind the Ilamatepec Volcano at 2100 meters altitude, the farm benefits from fertile volcanic soils and cool high altitude conditions. The coffee underwent an anaerobic natural process where cherries were harvested using Brix measurements for perfect ripeness, placed into sealed tanks for controlled fermentation, then dried on raised beds. This process enhances fruit clarity and sweetness with flavor notes of red apple, blackberry, and praline. The farm also grows SL-28, Caturra, and Bourbon varieties, with 13 hectares cultivated and the rest preserved as native forest.
