Finca Gaia is an organically certified coffee from Honduras, produced by Bernard Ornilla near the Celaque National Park. Grown at 1650 meters altitude, it features Yellow and Red Catuaí cultivars processed naturally. Cherries are dried in a solar dryer for three days before a traditional sun-drying period of approximately 20 days. The flavor profile includes honeydew melon, butter biscuits, and amaretto. Roasted as an omni-roast, suitable for all brewing methods.
