Finca Juan Martin coffee is a light roast from Cauca, Colombia, grown at 2,050 meters elevation. This Sidra variety undergoes an innovative oxidation washed process where beans are placed in a bioreactor with controlled oxygen flow to optimize yeast metabolism, minimizing organic acids while enhancing aromatic precursors. The beans are washed three times and dried for 10 days. Tasting notes include kumquat, pink grapefruit, mango, and vanilla with a sparkling acidity and subtle floral-spice complexity.
