This single-origin coffee comes from Finca Los Angeles in Apaneca, El Salvador, at 1,380 meters elevation. The farm grows nearly 100% Pacamara variety trees and processes this coffee using an anaerobic natural method, fermented in tanks for 72 hours before bed drying for 30-40 days. The coffee displays malt chocolate, hazelnut, and dried date notes with a velvety, rounded body. It was roasted to dark for espresso while maintaining clarity and character from the harvest.

Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
