This single-origin coffee is from Finca Lugmapata in Pallatanga, Chimborazo, Ecuador, grown at 1600-2000 meters elevation. The Sidra variety undergoes an anaerobic washed process: aerobic fermentation in sacks, followed by washing, submersion, and three days of anaerobic fermentation. Light roasted, this coffee presents starfruit and Bartlett pear notes with a creamy, yogurt texture and osmanthus tea finish.

Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
