This is a Natural processed coffee from San Sebastián, El Salvador. It features the rare "Kenya" variety - an heirloom cultivar discovered before the term "heirloom" was commonly used - preserved at Santa Sofia farm by Maria Pacas' family. The coffee showcases bright, juicy complexity with red fruit and florals, featuring blackberry and raspberry lemonade notes with a silky mouthfeel.
Phil Goodlaxson founded Corvus Coffee Roasters in 2010 in Denver, Colorado, starting with a small roaster in his garage before scaling up. The roastery now operates multiple retail locations across the Denver metro area and roasts well over 100,000 pounds of coffee annually.
