This coffee is produced by Maximiliano García on his four-hectare farm called Garmas in El Huabo, San Ignacio, northern Peru. The lot is a washed Geisha variety, dry fermented for approximately 24 hours before being washed and rinsed. The coffee is dried in a parabolic dryer and on the roof of the house using shade nets for controlled drying, taking 15-20 days. The result is an aromatic, refined, and elegantly structured cup.
