This Gesha coffee is an heirloom variety from Finca Santa Maria in the Santander region of Colombia, part of the Hacienda Cafetera La Pradera coalition. The farm is certified organic and Smithsonian Bird Friendly, cultivated by 22 women who are heads of household. The coffee is processed using the honey method, which enhances its complexity and creates an appearance, texture, and aroma resembling honey. Only the ripest fruits are hand-harvested, and the beans undergo careful extraction and drying. The coffee has been lab-tested for bioactive compounds and micronutrients, with the highest antioxidant capacity among any coffee released by this roaster.
