About This Coffee

A naturally processed single origin coffee from the Ayarza region of Guatemala. This special lot is processed centrally at the cherry mill in Ayarza by an export partner working with numerous smallholder farmers, paying a premium for ripe cherry to maintain strict quality standards. The coffee undergoes a 120-hour (5-day) anaerobic cherry fermentation. Tasting notes selected by Q Grader Monika include Lime, Kiwi, and Mango.

Imbibe Coffee Roasters

Gary Grant founded Imbibe Coffee Roasters in Dublin 8 in 2018, pivoting from importing roasted beans from the United Kingdom after Brexit made that model unsustainable, having originally entered the coffee trade in 2009 after a career in finance. From the start, Imbibe has donated a minimum of one percent of all revenue to Women's Aid every year, with additional contributions to origin projects including four bridges built for ASOPEP cooperative farmers in Colombia, plus one percent shared among staff, totaling three and a half percent of revenue given away before profit is calculated. Head of green bean sourcing and quality Monika Winiarek, a Q Grader and winner of the 2014 Irish AeroPress Championships, joined in 2019, bringing six years of experience from Coffee Angel and credentials as an Authorized SCA Trainer. Ninety percent of Imbibe's output is organic specialty coffee, sourced primarily from the ASOPEP cooperative in Colombia through exporter Covoya, and the roastery was the first to bring Panama Gesha coffee into Ireland. Grant also provides all full time staff six additional days of holiday per year beyond the standard twenty, a policy implemented in 2022 that reflects the same generosity that defines the business from bean to community.
