Guatemala Finca Canlaj

This single-origin coffee comes from Finca Canlaj in the Huehuetenango region of Guatemala, specifically from the municipality of Concepcion Huista. Produced by Diego, a coffee agronomist and member of the El Sendero Cooperative, which was established in 2016. The coffee is fully washed, with beans de-pulped and fermented for 12-18 hours, then washed and soaked in clean water for an additional 12 hours. The drying process takes 5-6 sunny days on patios, with beans turned hourly for even drying. This is a filter roast coffee.
