About This Coffee

A single-origin coffee from Toloxcoc, Rabinal, Baja Verapaz, Guatemala, grown at 1,450 MASL by producer Jaime Morales Milian on his farm Paraíso Escondido. The Maragogype variety — a natural mutation of Typica with notably large seeds — makes up more than half of his 8-hectare farm. Processed using a 38-hour fermentation washed method and sun-dried on raised beds for approximately 7 days. Flavor notes include key lime, golden pear, and persimmon, with high sweetness and balanced acidity.

Their roasting philosophy centers around their custom-built fluid bed air roaster—a unique machine that bounces beans on cushions of heated air rather than tumbling them in traditional drums, achieving 90% greater energy efficiency while developing what they call "Good Shit Energy" through their cultivated trade approach that pays above fair trade pricing and builds lasting partnerships with growers.
