This organic certified coffee is from San Pedro Necta in the Huehuetenango region of Guatemala, grown at altitudes between 1400-2000 meters. The varieties are Red Bourbon, Red Catuai, and Red Caturra, processed using the washed method. The coffee features dark chocolate, Linzertorte, Marillo, cocoa, almond, and pecan notes with an almost pastry-like mouthfeel and great sweetness. Huehuetenango is one of the three highest non-volcanic growing areas in Guatemala, where dry air from Mexico creates a unique microclimate. The coffee was transported to Europe by sailing ship in a CO2-reduced manner.

His approach is to roast coffees relatively light, a method that highlights the unique characteristics of a bean's origin and processing rather than masking them with roasted notes. This dedication has paid off, with Felix winning the World Coffee Roasting Championship in 2022.
