About This Coffee

A washed, patio-dried Guatemalan coffee from the cool limestone slopes of Sierra de las Minas in El Progreso, sourced from multiple small estate holders. Prepared in Antigua by Josue Morales and Los Volcanoes Coffee, which emphasizes biodynamic practices and farmer education. Composed of Bourbon, Red Caturra, and Yellow Caturra varieties grown at 1,800 masl. Lightly roasted for espresso, the cup delivers ripe pear, red apple, crisp malic acidity, and gentle dried-fruit sweetness with a silky texture.

Fjord Coffee

Kresten Thøgersen, Morgan Love, and James Maguire founded Fjord Coffee in 2016, born from a collaboration between the Father Carpenter and Silo cafe teams who pooled resources to build a shared roasting operation. The roastery is located in East Berlin, where the team works on a cast iron Probat roaster using a unique combination of conduction and convection methods. Their Nordic style roasting philosophy draws out naturally sweet and vibrant flavors while showcasing the diversity of regions and processing methods from origins including Brazil, El Salvador, Colombia, Kenya, Guatemala, and Ethiopia. Direct trade relationships with farmers go beyond simple sourcing, often extending to the creation of experimental lots developed in partnership. In 2023, Fjord and Father Carpenter formally separated, with each pursuing its own roasting identity while retaining the collaborative spirit that brought them together.
