This coffee is from San Julian farm in Guatemala's Palencia region, grown at 1770-1915 meters altitude. It is a washed coffee with 60 hours of fermentation time, double dried on patios for 7-10 days then on mesh for 15 days for even moisture content. The varieties are Pache, San Ramón, Cataui, and Caturra. The coffee has a cupping score of 86 with prominent notes of caramel, raspberry, and cocoa. Complex sugars are evident on the aromatics and finishing cup, with subtle citric acidity giving hints of raspberry and orange. Nice dark chocolate tendencies appear on the cooling cup. Producer Michael Holm-Johanessen founded San Julian in 2001, with Terra Negra as the sourcing partner since 2016.

Elevator Coffee was founded in 2016 by Jay Sycip and Andrew Coe in Portland, Oregon. Coe, the head roaster and coffee buyer, won the 2023 U.S. Coffee Roasting Championship and placed third at the World Coffee Roasting Championships in Taipei the same year. The roastery previously operated a cafe in SE Portland until Fall 2020, then pivoted to a wholesale and online model, roasting to order and shipping weekly. A 96 point Coffee Review score ranks it among the top roasters in the Northwest. The ethos is summed up in a tagline: roasted by nerds, not snobs.
