About This Coffee

This is a washed, light-roasted filter coffee from Finca Santa Elisa Pachup, located on the western slopes of the Acatenango and Fuego volcanoes in the Acatenango region, Chimaltenango, Guatemala, at 1200–1700 masl. The farm spans 506 hectares, with 360 dedicated to coffee, and is processed at Beneficio La Esperanza by Los Volcanes Coffee. The variety is Marsellesa-Sarchimor. Tasting notes include honeydew, kiwi, and red apple, offering a bright, clean, and subtly complex cup suited for filter brewing.

Fjord Coffee

Kresten Thøgersen, Morgan Love, and James Maguire founded Fjord Coffee in 2016, born from a collaboration between the Father Carpenter and Silo cafe teams who pooled resources to build a shared roasting operation. The roastery is located in East Berlin, where the team works on a cast iron Probat roaster using a unique combination of conduction and convection methods. Their Nordic style roasting philosophy draws out naturally sweet and vibrant flavors while showcasing the diversity of regions and processing methods from origins including Brazil, El Salvador, Colombia, Kenya, Guatemala, and Ethiopia. Direct trade relationships with farmers go beyond simple sourcing, often extending to the creation of experimental lots developed in partnership. In 2023, Fjord and Father Carpenter formally separated, with each pursuing its own roasting identity while retaining the collaborative spirit that brought them together.
