This coffee is a Typica Mejorado variety from Hacienda La Papaya in Ecuador. It is a washed process coffee known for its exceptional sweetness, clarity, and vibrant citrus character. The cup profile is bright and refined, featuring tasting notes of lemon bars and white peach, balanced by a deep dark chocolate finish. This lot reflects the meticulous cultivation and processing standards maintained by producer Juan Peña.
Phil Goodlaxson founded Corvus Coffee Roasters in 2010 in Denver, Colorado, starting with a small roaster in his garage before scaling up. The roastery now operates multiple retail locations across the Denver metro area and roasts well over 100,000 pounds of coffee annually.
