About This Coffee

Holy Mountain is a complex blend featuring three distinct components: a washed Papua New Guinea from Kunjin, a yeast-fermented Parainema from Honduras, and a dry-processed Robusta from Ecuador. This coffee offers a rich, layered profile with initial notes of citrus, blood orange, and florals, transitioning into a creamy mid-palate of lemon verbena and kumquat. The finish is deep and velvety, featuring dark chocolate, black sesame, Brazil nut, licorice, and a hint of rye-like spice. It is a versatile coffee suitable for various brewing methods, including pour-over, French press, espresso, and cold brew.

Chromatic Coffee

Chromatic Coffee was founded on October 13, 2012 by Hiver van Geenhoven, Wendy Warren, and James Warren in San Jose, California. The roastery operates an Opus 4 with a 200 pound drum, roasting exclusively to order on a Monday through Thursday schedule with a Wednesday evening cutoff for weekly fulfilment. Direct trade relationships include partnerships with Rosalio Ventura at Finca Elizabeth and Hidardo Hernandez at Finca Cascarita in Honduras, both supported by premiums that fund regenerative farming practices. The range specialises in micro lot, producer direct coffees including natural process and anaerobic fermented offerings. Chromatic won Metro's Best New Coffee Roaster in 2013 and Best Coffee Roaster in the 2025 Best of Silicon Valley awards, and is also an authorised dealer for La Marzocco, Fetco, Baratza, and Nuova Simonelli equipment.
