This coffee is a single-origin offering from the Chiancla region in La Paz, Honduras, grown at an altitude of 1600 meters. Produced by Marysabel Caballero and Moises Herrera, this Catuai variety is processed using the natural method. It features a deep, complex profile with a long caramel aftertaste and a high body reminiscent of dense cocoa, complemented by tropical notes including pineapple and subtle alcoholic nuances. This coffee is roasted to a light level and is well-suited for filter brewing methods.

Brothers Włodek and Jarek Ziółkowski have been roasting coffee for fifteen years, turning their passion professional with the opening of their roastery in 2018 under the name Bracia Ziółkowscy Palarnia Kawy, and both hold SCA membership that underpins the technical rigor they bring to sourcing and profiling every batch. The brothers have won medals at the Polish Coffee Roasting Championships, recognition that placed them among the country's most accomplished roasters and validated an approach built on roasting only the freshest, highest grade specialty beans available. Beyond their own production Włodek and Jarek provide training and advice to other roasters and baristas across Poland, sharing the knowledge they have accumulated over a decade and a half of working with coffee, and their trade show booths have become a consistent draw at Polish coffee events. The roastery supplies cafes throughout Poland and offers a subscription service for home customers, publishing a Polish language blog on coffee facts and brewing tips that extends the educational mission beyond the roastery walls.
