This coffee is from El Cielito in the Santa Bárbara department of Honduras, produced by second-generation farmer Nelin Yovani Guzman Muñoz on his farm Los Zorzales. It is a Parainema varietal, a locally bred Sarchimor developed by IHCAFE to resist nematodes. The coffee is processed as a natural with an extended drying period under protective parabolic shade. The result is a bright, sweet cup with pronounced notes of pineapple, green apple, and kombucha.
