A regional blend from the Huila region of Colombia, grown by smallholder producers at 1400–2000m altitude in the central Andes. Cultivars include Castillo, Caturra, and Colombia varieties, selectively hand-picked and washed before being decaffeinated using the Caña EA (ethyl acetate derived from sugar cane) process. Roasted as an omni-roast suitable for both filter and espresso, with flavor notes of milk chocolate, granola, and honey sweetness.
Named after the ancient Roman name for Lisbon, Olisipo Coffee Roasters was founded by Antony Watson and Sofia Gonçalves with a mission to honor their city's history of exploration. They see themselves as modern-day navigators, exploring the world to source unique and high-quality beans from small, independent producers.
