This coffee is from Colombia, produced by Don Ildefonso Cordoba, a member of the Los Guácharos group in Bruselas. The farm is located at 1800 meters elevation and features the Aji Bourbon variety, a new variety that gained recognition at the 2021 Cup of Excellence where it placed 6th. The coffee is fully washed processed. The Aji Bourbon plant has a distinctive pepper-like aroma when cherries are picked, and genetic analysis suggests it likely derives from an Ethiopian landrace rather than being a true bourbon. The coffee exhibits high floral characteristics, zippy layered acidity, and lots of sweetness, with flavor profiles similar to washed Ethiopian coffees. This is a light roast with a cupping score of 88.
Elevator Coffee was founded in 2016 by Jay Sycip and Andrew Coe in Portland, Oregon. Coe, the head roaster and coffee buyer, won the 2023 U.S. Coffee Roasting Championship and placed third at the World Coffee Roasting Championships in Taipei the same year. The roastery previously operated a cafe in SE Portland until Fall 2020, then pivoted to a wholesale and online model, roasting to order and shipping weekly.
