This Catuaí variety coffee comes from Ratnagiri Estate (Pearl Mountains) in Chikmagalur, India. The estate, established in 1927 and now run by third-generation farmers Ashok and Divya Patre, sits on high-altitude slopes with fertile soil and generous rainfall under a canopy of silver oak trees. The cherries underwent 42 hours of anaerobic fermentation with Intenso and Cima microbes in specialized bioreactors, then rested on raised beds for 24 days. The cup delivers a remarkable floral profile with sangria-like characteristics.
A true icon of Melbourne's coffee scene, St. ALi was founded in 2005 and has been a pioneer of the specialty coffee movement in Australia. Known for being innovative and uncompromising on quality, their approach involves direct trade relationships with growers and in-house roasting to create unique and exceptional coffee experiences.
