About This Coffee

This coffee originates from the Malabar Region of India, grown at 1100-1200 meters altitude. It features a mixed variety of beans and undergoes the famous Monsoon processing method, where the dry monsoon climate alters the coffee beans through controlled fermentation by adjusting moisture content. This process gives the beans a unique pale yellow color and transforms their size and texture. The medium roast brings out spicy, nutty, and sweet chocolatey flavors with a heavy body, low acidity, and intense character that has captivated coffee drinkers worldwide.

Ief & Ido

Ief & Ido is a specialty roastery in The Hague, the Netherlands, founded in 2018 by the father and son team Ido and Ief. Ido had been home roasting for over 15 years, at one point pulling shots on an original Faema E61, while Ief discovered specialty coffee through an espresso in Berlin that led him to study the craft across several countries. Together they roast on a Giesen W15 in an old industrial building in The Hague's southwest, combining hand regulated control with modern monitoring technology. Sourcing runs directly from farmers beyond Fairtrade standards, with fully traceable single origins from Brazil, Colombia, Guatemala, Ethiopia, Costa Rica, Kenya and Mexico, each listed with processing method, tasting profile and body and acidity ratings. Ief & Ido supplies over 50 locations in the region including Michelin starred restaurants and the concert venue Paard van Troje, and delivers locally by cargo bike.
