A single-origin coffee from the municipality of Inzá in the Cauca region of Colombia, grown on the Macizo Colombiano plateau at 1500–2100 meters altitude. Produced by the ASORCAFE Association, a cooperative of 290 smallholder farmers. Varieties include Colombia, Castillo, and Caturra. Coffee is washed — de-pulped, fermented 20–40 hours, fully washed, then dried 8–15 days in parabolic driers. Omni-roasted for both espresso and filter methods, with tasting notes of dark chocolate, walnut, and blood orange, offering a rich body and smooth mouthfeel.
Named after the ancient Roman name for Lisbon, Olisipo Coffee Roasters was founded by Antony Watson and Sofia Gonçalves with a mission to honor their city's history of exploration. They see themselves as modern-day navigators, exploring the world to source unique and high-quality beans from small, independent producers. Their roasting style is dedicated to showcasing the stories and distinct flavors of these origins.
