This coffee is from Finca Santa Mónica in Armenia, Quindio, Colombia, produced by Jairo Arcila at 1500 meters above sea level. The Castillo variety undergoes an experimental co-fermentation process where coffee cherries are pulped and placed in sealed plastic bags for extended anaerobic fermentation in mucilage alongside honey and dried, powdered dragonfruit. After fermentation, the coffee is dried on raised beds. The result is an intensely aromatic and wildly flavorful coffee with notes of sour candy, cherry popsicle, purple flowers, and hibiscus tea, offering a light and funky drinking experience.
