About This Coffee

A Pink Bourbon variety from Farm Zarza in Bruselas, Pitalito, Huila, Colombia, grown at 1500–1800 MASL. Produced by second-generation farmer Jhonatan Gasca alongside his brother Johan. Ripe cherries are hand-selected and undergo a two-stage oxidation and fermentation process (48–60 hours each), followed by a thermal shock quench using hot (50°C) and cold (20°C) water to halt fermentation and fix volatile compounds. The coffee is then sun-dried on canopy for 10–12 days.
