This coffee is a blend of Caturra, Castillo, and Colombia varieties from the Huila region of Colombia, cultivated by Brayan Alvear. The coffee undergoes an innovative co-fermentation process beginning with 24-hour pre-fermentation in plastic bags, followed by 24-hour cherry fermentation. After pulping, the beans are co-fermented anaerobically for 5 days with dehydrated strawberries. The beans are mechanically dried for 10 days, followed by a 5-day stabilization period. The resulting flavor profile features notes of strawberry, milk chocolate, and malic acid.
Spojka Roastery was founded in December 2022 in Prešov, filling a gap for a dedicated specialty roastery in eastern Slovakia. Head roaster and owner Viktor Štefančík is a former barista who regularly represented Prešov coffee shops at the Slovak national championship and competed at the world level, bringing that competition trained palate to his selection and roasting of green coffee. The team targets coffees scoring around 85 points on the SCAA scale and has been steadily sourcing higher scored lots as the operation grows. Their modern cafe near the Torysa river doubles as a roasting space where visitors can watch the process, taste the results, and take packets of freshly roasted beans home.
