This coffee is from A Coffee Farm in the Pear Tree area of the Ka'ū District on Hawaii Island, grown at 1,300-1,500 feet elevation. The variety is Lempira, a disease-resistant cultivar developed in Central America. The coffee is processed using anaerobic washed method with wine yeast fermentation. Roasted light to preserve acidity and structure. Flavor profile features raspberry, walnut, dark chocolate, and cabernet franc undertones with green apple-like acidity. The body is structured and medium-light with crisp, focused acidity and a subtle red-wine character finish.
