Kima Coffee

About This Coffee

This AA grade coffee is from the Karimikui factory in the Kirinyaga region of Kenya, established in 1966. Located at 1,700-1,800 meters altitude, it serves the villages of Githureia, Gituba, and Kiamugumo. The coffee is grown in rich volcanic red soil with temperatures between 13°C and 24°C. Affiliated with the Rungeto Farmers Cooperative Society, the farmers primarily cultivate SL28 and SL34 varieties (99% of production), with occasional small amounts of Ruiru 11. The washed process involves hand-sorting cherries, disc depulping, density classification into 3 grades, 16-24 hour fermentation under closed shade, washing and density reclassification, and 16-18 hour soaking. Sun-drying on African raised beds takes up to 21 days, with coffees covered during midday and night. Flavor notes include blueberry, blackcurrant, nectarine, caramel, and honey.

Rabi Aouam trained as a barista starting in 2010, won the Andalusian Barista Championship in 2014, and began roasting commercially in 2018 without a fixed space. By 2021 he had a roastery and tasting room in the center of Malaga, and the operation quickly gained momentum. Kima was named Best Specialty Coffee of Spain in 2024 and ranked in the top 100 coffee destinations worldwide by Neodrinks in 2025. Rabi works exclusively with 100% Arabica specialty coffee, hand roasting each batch and selecting from a wide range of origins that includes rare varietals like Geisha from Colombia and Wild Orchid Liberica from Vietnam. An in house academy trains professionals from the hospitality sector, with baristas traveling to Malaga specifically for the courses. The philosophy is direct: flavor, traceability, zero artifice.
