This natural processed coffee is from the Kayanza region of Burundi, processed at the Umoco washing station. Grown at elevations between 1800-2200 meters above sea level in rich red clay soils near the Kibira National Forest. The Red Bourbon variety undergoes a seven-day sundried fermentation, followed by 3-5 days in parchment sacks, and finally 25-30 days of drying on traditional African raised beds. The coffee exhibits flavor notes of cherry, pineapple juice, and brown sugar.
Night Swim Coffee was established in Charlotte, North Carolina in 2021 through the merger of two pioneering operations: Not Just Coffee, founded in 2011 by James and Miracle Yoder, and Undercurrent Coffee, founded in 2018 by Todd and Erin Huber.
