Kayon Mountain

About This Coffee

Natural processed Ethiopian coffee from Kayon Mountain Farm in the Guji zone of Oromia region, Sidama. Grown at 1900-2200 meters altitude on a 240-hectare organic certified farm using sandy clay loam soil under natural shade. Mixed heirloom varietals are dried on raised beds for 2-3 weeks with hand sorting. Intensely sweet with heavy red fruit notes including strawberry and lemonade, jasmine hints, citric acidity reminiscent of Meyer lemon and clementine, finishing with cocoa.

Penstock Coffee Roasters was originally founded in 2009 as OQ Coffee by Ben and Jessica Schellack before rebranding to Penstock in December 2018. Based in Highland Park, New Jersey, the roastery holds CCOF certified organic status and sources 85% of its coffee directly from farms in Central and South America, building relationships rooted in transparency and shared values. The remaining 15% comes from coffees bearing certified organic, Fair Trade, Bird Friendly, or Rainforest Alliance designations, ensuring all selections meet rigorous standards. Two time Good Food Awards finalist status in 2017 and 2018, alongside a Community Dividends Grants program supporting social justice projects, reflects commitment extending beyond coffee into systemic change.
