About This Coffee

This natural process Ethiopian coffee originates from Kayon Mountain Farm in the Guji region of Oromia, at 1900-2200 meters altitude. The beans are mixed heirloom varietals processed naturally with mild fermentation, dried on raised beds for 2-3 weeks, and hand-sorted to remove defects. The coffee is organically certified. Tasting notes include strawberry, lemonade, jasmine, with citric acidity ranging from meyer lemon to clementine, and finishing cocoa notes.

Penstock Coffee Roasters was originally founded in 2009 as OQ Coffee by Ben and Jessica Schellack before rebranding to Penstock in December 2018. Based in Highland Park, New Jersey, the roastery holds CCOF certified organic status and sources 85% of its coffee directly from farms in Central and South America, building relationships rooted in transparency and shared values. The remaining 15% comes from coffees bearing certified organic, Fair Trade, Bird Friendly, or Rainforest Alliance designations, ensuring all selections meet rigorous standards. Two time Good Food Awards finalist status in 2017 and 2018, alongside a Community Dividends Grants program supporting social justice projects, reflects commitment extending beyond coffee into systemic change.
